Kale Vision Salad

  1. 1 cup Kale – stems removed, leaves shredded or finely chopped
  2. 1 cup Spinach
  3. ¼ cup Walnuts – chopped
  4. 1 cup Quinoa – cooked
  5. 1 Avocado – cut up
  6. 1 Orange Bell Pepper – diced
  7. 6 tbsp. Extra Virgin Olive Oil
  8. 1 cup Garbanzo Beans – washed
  9. 3 dashes Pink Himalayan Salt
  10.  Crushed Black Pepper – to your liking

Directions:
Prepare Quinoa first by boiling in water.  1 part quinoa, 2 parts water.  Boil until water is absorbed and quinoa is fluffy.  Stir occasionally.
In a large salad bowl massage kale with sea salt to make it soft for 2-3 minutes.  Add all other ingredients, toss with salad dressing; serve.
